Sicilian Pasta Recipe: Carrettiera Spaghetti
===========

A simple first course for lunch or dinner that derives its name from the “carrettieri” or cart drivers—Sicilian transporters of goods (and people). They brought with them a few ingredients, possibly with a long shelf life, to eat at when they had time.

This Italian pasta recipe has very few ingredients and is characterized by the uncooked ingredients. The result is a dish with intense and decisive flavors.

There are some variations of the “Pasta alla Carrettiera” (recipe never codified): with or without fresh tomatoes, with or without toasted breadcrumbs (“moddica atturata”), etc… Flavia offers you the version from the Platani valley (western Sicily) or with fresh tomatoes; to which she adds the “moddica atturata”.

Whatever the nuance of this pasta, the strong flavor of the pecorino and fresh garlic will remain the predominant notes; to which will be added the flavors of an excellent olive oil and spicy chili pepper…plenty. You can add the pecorino grated, but we prefer it as Flavia makes it: a cheesy pecorino sauce that coats every strand of Pasta
