Ingredients:
• Water: 1 cup (230 ml)
• Fresh yeast: 1 tsp. (4 g) or dry yeast: ½ tsp. (2 g)
• (Optional) Sugar: 1 tsp. (4 g)
• Bread flour: 1 ½ cups (220g)
• Whole wheat flour: ¾ cup (100g)
• Salt: 1 tsp. (6g)

This recipe doesn’t require any kneading, just mixing! I use a unique method I call “lift and slap”, together with “stretch and fold”, to help the dough rise nicely. The dough is then shaped into six beautiful loaves, sprinkled with flour, scored and baked to perfection. The result? A crust that sings and a soft, flavorful crumb that’s perfect with butter.
