18.6K views on YouTube

This bread has a crispy, flaky crust and an incredibly soft inside. The addition of rye flour gives it an amazing aroma and flavor that you won’t be able to resist. I don’t buy bread anymore because this recipe is just too good!

Ingredients:

For the starter:
• Water: 3 ½ tbsp. (50 ml)
• Fresh yeast: 1 ⅓ tsp. (6 g) or dry yeast: 1 tsp. (3 g)
• (Optional) Sugar: 1 tsp.
• Bread flour: ½ cup (60 g)

For the dough:
• Water: ¾ cup + 2 tbsp. (210 ml)
• Bread flour: 1 ½ cups (220 g)
• Rye flour: ¾ cup (100 g)
• Salt: 1 tsp. (6 g)

Tools I Used:

Baking pan I used to bake this bread: https://amzn.to/3N8ZPUi (I used two of them, one turned upside down and used as cover)

Alternative pan:
* https://amzn.to/49UyaOo – either two of these, one turned upside down and used as a cover, or one, but covered with aluminum foil for the first bake.
* https://amzn.to/4gnx6Fb – same as the previous pan.

* https://amzn.to/45EnuSO – “flour sifter” a.k.a. tea strainer
* https://amzn.to/4qCUXVM – my favorite bread lame

This recipe doesn’t require any kneading, just mixing! I use a unique method I call “lift and slap”, together with “stretch and fold”, to help the dough rise nicely. The dough is then shaped into six beautiful loaves, sprinkled with flour, scored and baked to perfection. The result? A crust that sings and a soft, flavorful crumb that’s perfect with butter.

Remember, the joy of cooking is in the process as much as in the final product. So, let’s enjoy the process together and make some delicious bread! 🥖
